Maki

Most people think of sushi as maki, or a combination of fish, vegetables, and rice. Seaweed is used to wrap sushi rice in layers of vegetables and fish. Maki, a traditional type of sushi, can be prepared raw or cooked. If the rice is not on the outside of the dish, it’s uramaki. It is also temaki if all the ingredients are gathered into a nori cone (dried seaweed).

Nigiri

Nigiri, like maki sushi, is another type. But unlike maki sushi, nigiri is not rolled. Instead, thinly sliced fish is placed on top of a mound of vinegared rice. Sushi chefs often add a little wasabi or toasted seaweed between the rice and fish. Nigiri is roughly equivalent to the rice portion.

Sashimi

Although it’s often mistakenly referred to as sushi, and is often served side-by-side in sushi restaurants, sashimi technically is not sushi. Sashimi simply refers to raw fish that has been cut in a specific way and served with no rice or other ingredients. Although sashimi is simple to present, its preparation can be quite complicated. The best quality fish must be chosen. This is why the “sashimi grade” label is often placed on the fish.
